Rice Flour Recipe - Idiyappam and Kozhukatti

Idiyappam


To a required amount of Rice Flour add boiling water and a pinch of salt. Mix well and knead a soft dough. Using the String hopper press make idiyappam and steam it. You can add coconut milk and serve. It can also be served with grated coconut, jaggery, and cardamom powder or spicy stew.


Kozhukattai


Different varieties of kozhukattai can be made using this Rice flour. 1. To a required amount of Rice flour add boiling water and a pinch of salt to knead a soft dough. Take small portions of dough and make flat discs. Stuff the grated coconut, jaggery, cardamom powder mixture from the center. Then fold to seal the edges and steam the kozhukattais.​

​2. To a required amount of flour add one pinch of salt, Palm jaggery, cardamom, dried ginger, grated coconut to make palm jaggery kozhukattai.​

​3. To a required amount of flour add one pinch of salt and boiling water. Mix well to knead a soft dough. Roll the dough into small balls. Boil coconut milk in a pan. Cook the balls in the coconut milk and keep it aside. Add jaggery/sugar, cardamom powder, and the cooked balls into the coconut milk. Stir well and serve hot.​
